Vivi's fish pie recipe

Serves 3 very hungry people or 4 with sensible sized portions!
You will need:
  • 2-3 pieces of fish (get a nice mix of salmon, smoked white fish ie haddock, cod) OR 1 bag of fish pie mix
  • 125g cooked mussels
  • 125g cooked prawns
  • 500g potatoes, peeled and chopped (Maris piper or King Edward are the best for mashing)
  • 3 rashers of bacon chopped into small pieces (optional)
  • 1 onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 pint semi skimmed milk
  • Knob of butter/spread for mashing
  • 2 tablespoons cornflour
  • 1 tablespoon dried dill
  • 1 lime or 1 lemon
  • Veggies to serve (I had steamed leeks and broccoli)
  • Black pepper
  1. Preheat your oven to 140 degreesC/gasmark 4/350F.
  2. Get a pan of boiling water on the hob and boil your potatoes until soft.
  3. In the meantime in another pan gently cook the bacon, onions, garlic and bacon. You may not need to add oil depending on the moisture from the bacon. Once cooked turn on a low heat.
  4. When the potatoes are ready drain and mash them with the butter/spread and milk as required. Leave in the pan to cool.
  5. Put your cornflour in a cup or small jug and add a glug of cold water and stir.
  6. Add a dash at a time of milk to the onion and garlic mixture and stir. Alternate between the milk and the cornflour and keep stirring until you have a thick sauce.
  7. Stir in the dill and add black pepper to taste.
  8. Grate the zest of the lime/lemon and squeeze half the juice into the mixture.
  9. Remove from the heat.
  10. Put your fish and seafood into an oven dish.
  11. Add in the sauce and stir gently being careful not to break the chunks of fish.
  12. Spoon over the mash potato on the top and use your fork to make some funky patterns.
  13. Cook in the oven for 40 minutes and serve with veg of your choice.
