Cucumber Soup

Serves 1 really hungry person (I was!) or 2 if you're having a smaller portion.

You will need:

  • 1 small or 1/2 large cucumber
  • 1 pint water
  • 3 spring onions or 1 small onion (chopped)
  • 2 garlic cloves chopped
  • 2 teaspoons olive/vegetable oil
  • Small handful chopped mint
  • 100 ml milk
  • 1 vegetable stock cube
  • Black pepper to taste


  1. Peel the cucumber and set 1/3 of it to one side to add later for colour.
  2. Chop the cucumber
  3. Heat the oil in the pan.
  4. Gently cook the onion and garlic until they're soft.
  5. Add the water, cucumber, mint, back pepper.
  6. Dissolve the stockcube and allow to boil.
  7. Reduce the heat and leave to bubble away gently for  about 10 minutes.
  8. Blend if you want it smooth or you can leave it chunky.
  9. Add the milk and stir for a minute until the soup is hot again.
  10. Serve and enjoy!
