Serves 1 really hungry person (I was!) or 2 if you're having a smaller portion.
- 1 small or 1/2 large cucumber
- 1 pint water
- 3 spring onions or 1 small onion (chopped)
- 2 garlic cloves chopped
- 2 teaspoons olive/vegetable oil
- Small handful chopped mint
- 100 ml milk
- 1 vegetable stock cube
- Black pepper to taste
- Peel the cucumber and set 1/3 of it to one side to add later for colour.
- Chop the cucumber
- Heat the oil in the pan.
- Gently cook the onion and garlic until they're soft.
- Add the water, cucumber, mint, back pepper.
- Dissolve the stockcube and allow to boil.
- Reduce the heat and leave to bubble away gently for about 10 minutes.
- Blend if you want it smooth or you can leave it chunky.
- Add the milk and stir for a minute until the soup is hot again.
- Serve and enjoy!
